Quick and Easy Meals at Home

Hello, Weight Watchers! Did you succeed in cleaning up your environment this week and creating a “healthy zone” to support your weight-loss efforts? Environment is the first Level of Change that we need to manage in order to create a thin, fit identity. We can use the Three R’s strategy (Recognize, Remove, Replace) to improve our environmental settings.

It takes your brain 15-20 minutes to register fullness so if you eat quickly, then reach for seconds, you're likely to eat too much. Think first…wait and give your brain time to catch up with your stomach.

Weight Watchers members are not limited to salads and grilling! Sometimes, we may be tempted to eat out more frequently. Eating out is a part of life, and we should feel confident that we can do so within the Flex or Core plan. However, when we eat out a lot, it can be more difficult to stay on track. Preparing meals at home when possible keeps us in charge of the menu, ingredients, and portion sizes. Join me this week as we discuss Quick and Easy Meals at Home! Diet Soda Chicken

Makes four servings. POINTS value depends on size of chicken breasts. Also Core!

1 can diet soda

1 cup ketchup

4 trimmed chicken breasts

Mix soda and ketchup. Pour over chicken in a large, deep skillet and cook until chicken is cook through. Remove chicken from pan and reduce sauce to desired thickness.

Crockpot Salsa Chicken

Makes four servings. POINTS value depends on size of chicken breasts. Also Core!

1 packet low-sodium taco seasoning

1 cup salsa

4 trimmed chicken breasts

2 T corn starch

¼ cup FF sour cream

Place chicken breasts in crockpot. Combine salsa and taco seasoning and pour over chicken. Cook on low until chicken is cooked through. Remove chicken from sauce. Add corn starch and sour cream to sauce and cook to desired thickness. Chicken can be shredded for easy tacos or sandwiches. I also like to add black beans and/or corn to this recipe.
