Hello, Weight Watchers! After last week's discussion, I'm really excited to try out everyone's great ideas for making weight management even more of a bargain. There are definite financial and priceless benefits to weight loss, and we can enjoy them together!

Tuna with Lemony White Beans
Serves 4 | POINTS 6

  • 15 oz can cannellini (white kidney) beans, rinsed and drained
  • 1 tomato, chopped
  • 2 t olive oil
  • 2 t grated lemon zest
  • 2 cloves minced garlic
  • 1/4 t salt
  • 1/4 t black pepper
  • 2 T lemon juice
  • 4 6oz 1" thick tuna steaks
  • 2 T chopped flat-leaf parsley
Preheat the grill to medium-high or prepare a medium-high fire using the direct method (see page 13). Tear off four (15x18 inch) sheets of heavy-duty foil and spray the centers with olive oil cooking spray.

Toss together the beans, tomato, oil, lemon zest, half of the garlic, half of the salt, and half of the pepper in a medium bowl. Place 1/4 of the bean mixture in the center of each foil sheet and drizzle with the lemon juice.

Sprinkle the tuna with the remaining garlic, salt, and pepper. Place one steak on each portion with the bean mixture. To close th epackets, bring the opposite long sides of the foil up to meet int he center; fold the edges over twice, making 1/2" folds, to seal tightly. Double-fold the open sides, making 1/2" wide folds, to seal tightly.

Place the packets on the grill rack and grill, covered, until the tuna is slightly pink in the center, (~12 min). With a wide spatula, transfer the packets to a cutting board. Open carefully, standing back to avoid the steam. Transfer the tuna and bean mixture to four plates. Drizzle with the juices and sprinkle with parsley.
