You can learn to walk or run a 5k (3.1 mile) distance and maybe participate in a local 5K event sometime in June, July or August. Train with friends and family, other Weight Watchers members or meet up with the training teams that will be starting in May (see more details on the web site). You may participate in any 5k, but are encouraged to join Team Weight Watchers in the Unite 2 Fight Race Against Prostate Cancer on July 11, starting from the Indiana War Memorial at 8am.
If you’re not quite up to a 5k yet, you can still set a fitness goal that suits you best. If you’re not already active, make sure to read your Week 2 booklet “Start Moving More” for more information on how to safely get started with an exercise program. We’ll be talking about fitness goals and the “Momentum Walk-It” Challenge over the next weeks at our meetings. I am excited to tackle a new challenge and I hope you are too!

Spanish Rice Meatloaf
8 servings, 3 POINTS each
1 package Weight Watchers Zesty Spanish Brown Rice, cooked
2 pounds ground turkey
2 eggs
1 cup chopped onion
Mix all ingredients, shape into loaf and bake at 350 for 45 minutes.
Chicken Soup
8 servings, 3 POINTS each
1 package Weight Watchers Chicken Herb Pasta
3 cups Water
2 cans fat free broth
2 cups chopped cabbage
1 cooked chicken breast
1 stalk celery, chopped
1 carrot, shredded
1 small onion, chopped
Bring water, broth, chicken and vegetables to a boil. Add Chicken Herb Pasta and reduce heat. Cook for about 8 minutes, stirring occasionally.
Cheesy Pasta Parmesan Primavera
2 Servings, 6 POINTS each
Prepare Weight Watchers Tomato Parmesan Whole Grain Pasta Sides as recommended on the box. Spray a separate skillet with cooking oil, and cook 1 cup chopped zucchini, ½ cup sliced mushrooms and ½ cup chopped bell peppers over medium heat until tender. Add vegetable mixture to prepared pasta along with 1 cup low fat (1%) cottage cheese.
