Grilled Fruit Kabobs with Spiced Yogurt Sauce
Makes 4 servings
POINTS® value per serving: 2
6 oz Weight Watchers Vanilla Nonfat Yogurt
1/8 tsp ground cinnamon, or to taste
1/8 tsp ground nutmeg, or to taste
1 spray cooking spray
◊1 cup pineapple, fresh, chunks
◊8 medium strawberries, hulled
4 Weight Watchers Chocolate Cakes
1. To make yogurt sauce, in a small bowl, combine yogurt, cinnamon and nutmeg; mix well, set aside and refrigerate until ready to use.
2. To assemble kabobs, thread pineapple onto 2 metal skewers. Coat a large nonstick skillet or grill pan with cooking spray and heat over medium-high heat. Cook pineapple on one side for about 45 seconds; holding both ends of each skewer, flip kabobs and cook on other side for about 45 seconds more. Remove skillet or pan from heat and carefully remove pineapple from skewers.
3. To assemble kabobs, cut each Weight Watchers snack cake into 3 equal pieces. Thread a piece of snack cake, a piece of grilled pineapple and a whole strawberry (in that order) onto each of 4 skewers; repeat with remaining ingredients. Place finished kabobs on a serving dish and serve with yogurt sauce on the side. Yields 1 kabob and about 3 tablespoons of dip per serving.
