A LITTLE MUCH-NEEDED R&R
Hey Cyndi, you say, where the heck has the blog been for the lat two weeks?!?!
Well, to be honest, I was on a much-needed vacation. I really want to encourage all of you to practice that Take Care of Yourself Helpful Habit this fall. Almost universally, schedules are crazy and money is tight. However, you still need those little moments of clarity.
I climbed a mountain on my trip. (A little mountain, but hey, doesn't that sound terribly impressive?) Two things really struck me - from the top, it was AMAZING. We could see for miles, and miles. It was almost completely silent. There were no other hikers, no cars, no cell phone service, not even very many birds. It was amazing just to sit there on the rocks and BREATHE!
The other, more down-to-earth thing is that I really saw the benefit of my active lifestyle on this trip. We hiked for three days (and a tiny little hike on a fourth day, the first day we were there). Other than bruised shins from climbing the mountain, I felt pretty good and was completely up for a fifth day of hiking.
My husband, who is "naturally thin" (ask if you ever want to hear my soapbox schpiel on why I dislike that phrase) couldn't do it. A high school athlete, his current self is not active other than taking our dogs out and mowing the lawn. While he is thin, his inactivity made it impossible for him to do something special like hike an extra day in the park. I want you (and me) to keep that in mind the next time we want to skip an "everyday" workout - those tedious workouts now will bring special rewards later!

Bacon-Cheddar Mashed Potatoes
Makes 4 servings (1/2 cup each)
POINTS® value per serving: 3
◊1 1/2 pounds russet potatoes, peeled and cut into 1-inch pieces
◊1/2 cup fat-free sour cream
◊2 Tbsp fat-free milk
1/8 tsp salt
1/8 tsp black pepper
1/3 cup shredded low-fat sharp cheddar
2 slices center-cut bacon, crisp cooked and coarsely crumbled
◊1 scallion, finely chopped
1. Place the potatoes in a medium saucepan with enough water to cover by 3 inches; bring to a boil. Reduce the heat and simmer until fork-tender, 20–25 minutes. Drain and return to the saucepan.
2. Add the sour cream, milk, salt, and pepper; mash with a potato masher until the potatoes become creamy. Stir in the cheddar, bacon, and scallion.
