HEALTHY FOR CHEAP TIP OF THE WEEK

You don't have to cook two dinners every day or shop as if you were buying groceries for two different families. It is highly likely that junk food is not healthy for your significant other or children, as well as yourself! Junk food does not enter my house unless my husband buys it himself. A good 90% of the time, it's not worth the bother to him.

With the hustle and bustle of the holiday season, we have long to-do lists: gift-buying, worrying about money, attending social events, cooking, decorating, and dealing with challenging relatives. It's no surprise that we may be tempted to grab that candy at work or have an extra cup of eggnog. This week, we will learn how to manage stress without overeating. We can choose a different path this year - one that is not littered with cookie crumbs!

Taco Soup
~2.5 points per cup

2 cans diced tomatoes (may use tomatoes with chilis or Ro-Tel)
1 small can tomato sauce
1 pound ground protein of choice (browned, drained, and rinsed) or soy crumbles
1 can corn
1 can hominy
1 pkg taco seasoning
1 pkg dry ranch dressing mix
chili powder to taste
1 can black beans (may substitute soaked and rinsed dry beans)
1 can pinto beans (may substitute soaked and rinsed dry beans)

Combine all ingredients in a crock pot and cook on low until flavors are combined. (I usually let it cook 6-8 hours.)
