Spice-Oat Muffins
3 POINTS each
September/October Weight Watchers magazine
  • 1 c whole wheat flour
  • 1/2 c cornmeal
  • 1/2 c quick-cooking oats
  • 1/4 c packed brown sugar
  • 3 t cinnamon sugar
  • 1 t baking powder
  • 1/2 baking soda
  • 1/2 t salt
  • 1 1/4 c FF buttermilk
  • 1/2 c dried cherries or cranberries
  • 1/4 egg substitute
  • 2 T canola oil
  • 2T wheat germ
Preheat the oven to 400 F. Line a 12-cup muffin pan with paper liners.

Combine the first eight ingredients, reserving 2 t of the cinnamon sugar.

Combine the buttermilk, dried fruit, egg substitute, and oil in a small bowl, beating with a whisk until blended. Add the buttermilk mixture gradually to the flour mixture, folding with a rubber spatula just until flour mixture in moistened.

Fill the muffin cups evenly with the batter. Sprinkle with the remaining cinnamon sugar and wheat germ.

Bake until an inserted toothpick comes out clean (15 minutes). Cool in the pan five min. Unmold the muffins and cool completely.
