CHECK IT OUT!

I made this recipe from the new Best Eats cookbook this week and it was fabulous! Even my non-veggie-eating husband ate it! This can be prepared ahead of time and stored in the fridge before baking.

Roast Pork with Root Vegetable
8 servings | 5 POINTS values per serving
Core

  • 2# boneless pork loin, trimmed
  • 1 1/2 t salt
  • 1/2 t black pepper
  • 2 T Italian seasoning
  • 1 large sweet potato, peeled and cut into 16 pieces
  • 1/2 butternut squash (I used a whole small squash to avoid leftovers), peeled, seeded, and cut into 16 pieces
  • 2 turnips, peeled and cut into 8 wedges each
  • 1 large onion, cut into 8 wedges
  • 4 t olive oil
  • 1/2 t cinnamon
  • 1/2 t ground allspice
Preheat oven to 450. Spray a large jelly-roll pan with nonstick spray.

Sprinkle the pork with 3/4 t of the salt, 1/4 t of the pepper, and rub all over with the Italian seasoning.

Combine the vegetables, cinnamon, allspice, 1/4 t salt, and 1/4 t pepper in a large bowl. Toss to coat. Put the pork in the center of the pan and arrange the veggies around the pork.

Roast, stirring the veggies once after 30 min, until a meat thermometer reads 155 and veggies are browned (~45-50 min). Transfer the pork to a cutting board, cover loosely with foil, and let rest 10 min. Cut into slices and serve with the vegetables.
